EMMETT & SHINE Chuckwagon Cuisine

On
the Trail
It all starts with breads! The heavenly aroma of our homemade sour dough and
yeast breads tease your appetite. Steamy warm and delectably light - you can't get your fill! Slather with butter or dip with
gravy. Ummmm, GOOD! Then there are the Entrees. Whether its sausage
and eggs for breakfast, cowboy beef stew for lunch, or tender beef tenderloin for dinner, our entrees are deliciously generous.
You can always diet next week!Of
course the potatoes, fluffy whipped with a hint of garlic, sliced with spicy peppers and onions, baked in hot coals, or crispy
steak-fries - however you like this staple of the chuck box; we can suit your tastes! Beans? Dried foods were a necessity on long drives
and sometimes were all the cowboys had to eat - morning, noon, and night. Our secret recipes will have you coming back for
seconds and asking for beans for breakfast. Don't forget the Desserts! Imagine flaky pastry with bubbling hot fruit and you get an idea of how good
our cobblers are. Our bread puddings are inspirational and we have to hobble our fried fruit pies to keep them from walking
away! Our
advice? Life is short - eat dessert first!

About Us A bit of history; as native Texans, we certainly didn't escape the influence
cattle, ranching, and cowboys have had on our culture. In his lifetime Emmett (Harold) accumulated a wealth of cowboy experience,
a solid collection of tack and paraphernalia, picked up the art of blacksmithing, and began rodeoing at a early age. Shine
(Michael) has spent his career cooking within the hospitality industry as a chef. His love of the old west , horses and the
romance of the cowboy lifestyle led to him to contemporary cowboy cuisine and finally at Harold’s prodding, wagon cooking.
A long time ago, we
teamed up to cook for a host of folks around church and such. Along the way, we got many requests to cook for people - fund
raisers, corporate parties, open houses, weddings, rehearsal dinners, private parties, etc. We love the reaction people have
to our 100-year old wagon complete with its antique equipment and the flavor of our food authentically prepared over a wood
fire in heavy cast iron Dutch ovens and skillets. We enjoy taking folks back to a more rustic time and simple cuisine, dishing
up complete meals prepared on-site and served on spackled granite dinnerware.
